Did you ever watch the beginning of the UFC? It was a tournament style format and a little guy named Royce Gracie took on and beat alot of big guys.
That's a different time though. I guess my point is that these guys who try to fight a heavier class, think they should gain weight to do so, and IMO it always ends up hurting them. I see boxers try to do it all the time, and they always end up being slower then they were. Seems to me you can spend years of your life fighting at a certain weight, and then in 3-5 months get used to fighting at a much heavier weight.

agreed. staying at his normal weight class makes him unstoppable but at the same time, gsp is unbeatable in his class as is A silva.
Don't forget Anderson Silva in LHW. He hasn't lost yet
BJ Penn has fought at all different weight classes though. I don't see it being an excuse with him.
